This is an easy to prepare, light and delicious typical piedmontese dish, usually served as a starter.
Method
- Finely chopped or minced very lean beef
- Extra virgin olive oil
- salt
- Pepper
- Lemon
- Garlic
Mix all the condiments, salt and freshly milled pepper, in a bowl with the juice of half a lemon and a roughly chopped clove of garlic (that can be removed later) or finely crushed
Whisk the sauce with a fork for a couple of minutes to amalgamate the ingredients that will be used to dress the beef.
Its best to dress the meat at the last minute before serving to avoid a change in colour from the effects of the lemon.
It can be served straight from the dish or garnished with some parmesan shavings, finely chopped dressed olives or celery or in a lettuce leaf letting your imagination run wild.

Another variation of this dish is to serve very fine slices of the beef, dressed in the same way.
